I too switched from Evernote back to Notes. Simplicity was the #1 reason. I don't need nor want lots of toolbar options - just an easy fast method to record brain waves to words. As for tags, MacOS has great search capabilities. I create my own tags using an organized list of hashtags, for example #Notetaking or #FavBeaches. Works just fine. Color code them if you needs some glitz.
